Between working full time, going to school, spending time exercising, running kids to school or sporting activities, today’s busy schedules can sometimes provide a challenge to prepare healthy meals during the week. By spending a little bit of time on the weekends preparing meats, fruits and/or salads, you can fix healthy meals all week long.
A simple trick to saving time during the week is to purchase enough food on the weekends that you can prepare and then use throughout the week. Clean all your fruits and vegetables when you have a few minutes over the weekend. Then store them in airtight containers where you can add them to lunches or dinners and they will still be as fresh as when you purchased them. A small container of mini sweet carrots, grape tomatoes and sugar snap peas or a combination of your favorite vegetables are great for a snack during the day without weighing you down with a bunch of calories.
Cook a little extra meat when you are preparing meals on the weekends. For example, if you are fixing chicken breasts, cook a couple of extra and then you can use them during the week for either a main course meal with vegetables and/or a green salad or cut them into pieces and add to a green salad as the main course. Cook a lean roast with your favorite vegetables in a crock pot or make a bunch of lean meatballs that can be frozen and then reheated when needed. By cooking a little extra, you can prepare several meals with one effort, saving you time.
Make a green salad without adding in the ingredients that might become soggy during the week. Simply add those ingredients to the salad right before you are ready to serve it. It doesn’t take much time to cut up some mushrooms, tomatoes or a variety of different vegetables and then add them to the green salad for a delicious side dish or include some of the leftover meat for a main course.
Now when you are racing around trying to get everything done during day and week, you will know that it is only going to take a couple of minutes to prepare and serve a healthy meal in the evening or for lunch.
